My name is Carol and I have been on a gluten free diet for 58 years, long before it became fashionable.

I was diagnosed with celiac disease as a 7 month old baby, and apart from a brief period of trying normal food as a teen (HUGE mistake) I have been gluten free ever since.

Living gluten free today is so much easier than when I was young. Back then my mother had to order flour from abroad, whereas now you can pop to a local store or buy it online. 

However, these flours behave differently from the wheat based ones you may be used to.
